A summer salad and apple-chicken curry over rice

This time of year strawberries are in season, so what better way to enjoy them than in a salad? Here’s a favorite recipe we enjoy all summer long.

red leaf lettuce torn and cleaned
cleaned and sliced strawberries
crumbled feta or goat cheese
walnut pieces or halves:

Sauteed in olive oil till they begin to brown.  Shake on a tablespoon or so of brown sugar and stir till melted.  Add a splash (teaspoon/tablespoon) of balsamic vinegar.  Have a lid handy to control the splatters.  Let cool a little and serve on the salad.  Make enough to put some in the fridge for next time. 🙂
sweet and sharp dressing:

3 tbsp sugar, 1 tsp salt, 5 tbsp red wine vinegar or cider vinegar, 1/2 cup canola oil,  1/4 tsp paprika, 1/4 tsp onion powder, 1/8 tsp ground pepper.  Mix well and shake before serving over salad.


With your salad you could serve Apple-Chicken curry over rice.  This is a great recipe to use if you want to get rid of left over chicken and kids actually like it! 🙂

Saute 1 medium onion in a large skillet till softened.  Add 1 apple peeled and cubed.  Heat apple through for five minutes.  Add 1 can cream of chicken soup, 1 1/2 cup cooked and chopped up chicken, and 1 tsp curry powder or more to taste.  Stir and heat through.  Add a little water if too thick.  Serve over hot rice.  Serves ~ 4.

    Look delicious! I’ve often made a similar salad, just using spinach leaves and a different dressing, but everything else was the same. But now I’m going to have to try this! Can’t wait….. And it’s a funny coincidence that I’m making apple chicken curry tonight (also known as chicken ragu?).
