I had leftover chicken from a roasted chicken the other day and didn’t feel like making a pot pie on a summer day. So I made my own version of chicken salad up and it was pretty good if I do say so myself.
Easy Chicken Salad
Start out with cooked chicken, cubed. I had about 2-3 cups. Put chicken in a bowl, add 1 apple, peeled and diced. Throw in some quartered grapes, finely chopped red onion (1 small one), 1 peeled and grated carrot. I would have added celery if I had had some in the house. Mix with low fat mayonnaise till moist but not dripping. And the final ingredient which really made it delish? Curry powder. Shake away, taste and then shake some more. I’m guessing I put in between 1/2 to 1 tsp. It tasted wonderful on toasted rye bread!
